Ingredients

  • 120g (1 1/4 cup) almond flour
  • 200g (1 3/5 cup) confectioner’s sugar
  • 100g egg whites (about 3 extra-large eggs)
  • 50g white granulated sugar
  • 1 vanilla bean or 1 tsp vanilla paste
  • instant coffee granules
  • FILLING:
  • 8 ounces (226g) cream cheese, softened at room temperature
  • 1/2 cup (113g) butter, softened at room temperature
  • 3 to 4 cups (375g) confectioner’s sugar
  • 1 tablespoon Amaretto, OR 1 tsp almond extract
  • 1/2 teaspoon instant coffee granules
