Making a good lasagna usually consists of pasta, sugo, mincemeat and cheese, but did you ever think of making a lasagna with pumpkin? Check out these 3 interesting but mouthwatering lasagna recipes all with a creamy bechamel sauce by La Cucina di Rita.

 

Pumpkin Lasagna Ingredients:

  • 500 Grams of Cubed Pumpkin
  • Olive Oil
  • Half an Onion
  • A Sprig of Rosemary
  • Bechamel Sauce
  • 300 Grams of Lasagna Sheets
  • 60 Grams of Parmesan Cheese
  • 250 Grams of Cubed Taleggio Cheese

Bake at 200º C for 25 minutes.

 
Sausage & Mushroom Lasagna Ingredients:

  • Olive Oil
  • 1 Clove of Garlic
  • 200 Grams of Ground Sausage
  • 800 Grams of Mixed Mushrooms
  • Salt
  • Black Pepper
  • Parsley
  • 300 Grams of Lasagna Sheets
  • Bechamel Sauce
  • 250 Grams of Mozzarella
  • 50 Grams of Parmesan

Bake at 200º C for 20-25 minutes.

 

Ingredients for Eggplant Lasagna:

  • Olive Oil
  • Half an Onion
  • 500 Ml of Tomato Sauce
  • 5 Fresh Basil Leaves
  • Salt
  • 2 Eggplants
  • Oil for Frying Eggplant
  • Bechamel
  • 250 Grams of Mozzarella
  • 50 Grams of Parmesan

Bake at 200º C for 25-30 minutes.
