Mascarpone Berry Tart

Ingredients:

For the Crust:

1 1/4 cups all-purpose flour
1/4 cup granulated sugar
1/2 cup unsalted butter, cold and cubed
1 egg yolk
1 tablespoon ice water

For the Filling:

8 ounces mascarpone cheese, at room temperature
1/4 cup powdered sugar
1 teaspoon vanilla extract
1 cup heavy cream
For the Topping:

2 cups fresh mixed berries (such as strawberries, blueberries, raspberries, and blackberries)
2 tablespoons berry jam or preserves, for glazing
Fresh mint leaves, for garnish (optional)

Instructions:

Preheat your oven to 375°F.
To make the crust, in a food processor, combine the flour and granulated sugar. Add the cold cubed butter and pulse until the mixture resembles coarse crumbs.
Add the egg yolk and ice water to the mixture and pulse until the dough comes together. Be careful not to over mix.
Press the dough into the bottom and up the sides of a tart pan with a removable bottom. Prick the bottom of the crust with a fork to prevent it from puffing up during baking.
Bake the crust in the preheated oven for 12-15 minutes, or until golden brown. Remove from the oven and let it cool completely.
While the crust is cooling, prepare the filling. In a mixing bowl, beat the mascarpone cheese, powdered sugar and vanilla extract until smooth and creamy.
In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the mascarpone mixture until well combined.
Spread the mascarpone filling evenly over the cooled tart crust.
Arrange the fresh berries on top of the mascarpone filling in a decorative pattern.
In a small saucepan, heat the berry jam or preserves over low heat until melted and smooth. Brush the melted jam over the berries to glaze.
Chill the tart in the refrigerator for at least 1 hour to allow the filling to set.
Just before serving, garnish the tart with fresh mint leaves for decoration (optional).
