Servings: 6 to 8
Ingredients:
- Espresso – 2 cups freshly brewed
- Granulated sugar – 5 Tablespoons
- Amaretto Liqueur (Frangelico is also an option) – 4 Tablespoons
- Whipping Cream – 1 cup
- Chocolate covered coffee beans or chocolate shavings for garnish
Preparations:
- Pour the coffee into a glass pan
- Add 3 tbsp of sugar and mix until dissolved
- Stir in 2 tbsp of the liqueur of your choice
- Cool mixture until room temperature on counter, then transfer to freezer
- Every 30 minutes, remove pan from freezer and scrape the surface with a fork until the entire mixture has a granita consistency, approximately 4 hours.
- Immediately before serving, beat together the whipping cream, sugar and the rest of the liqueur.
- Spoon the granita into cups and top with the whipping cream mixture.
- Garnish with chocolate covered coffee beans or chocolate. Enjoy!
