Espresso Granita with Liqueur

Servings: 6 to 8

Ingredients:

  • Espresso – 2 cups freshly brewed
  • Granulated sugar – 5 Tablespoons
  • Amaretto Liqueur (Frangelico is also an option) – 4 Tablespoons
  • Whipping Cream – 1 cup
  • Chocolate covered coffee beans or chocolate shavings for garnish

Preparations:

  • Pour the coffee into a glass pan
  • Add 3 tbsp of sugar and mix until dissolved
  • Stir in 2 tbsp of the liqueur of your choice
  • Cool mixture until room temperature on counter, then transfer to freezer
  • Every 30 minutes, remove pan from freezer and scrape the surface with a fork until the entire mixture has a granita consistency, approximately 4 hours.
  • Immediately before serving, beat together the whipping cream, sugar and the rest of the liqueur.
  • Spoon the granita into cups and top with the whipping cream mixture.
  • Garnish with chocolate covered coffee beans or chocolate. Enjoy!
