Creamy Pasta with Sausage

This creamy pasta dish with sausage and white wine adds a touch of elegance and depth of flavor. It’s a comforting and delicious meal that’s easy to prepare and perfect for any occasion. This recipe serves 4 to 6 people.

Ingredients:
12 ounces (340 grams) of pasta (penne, rigatoni, or your favorite type)
1 pound (450 grams) of Italian sausage (mild or spicy, casings removed)
1 tablespoon olive oil
1 medium onion, finely chopped
3 cloves garlic, minced
1/2 cup white wine
1 cup heavy cream
1 cup chicken broth
1/2 cup grated Parmesan cheese
1/2 teaspoon dried basil
1/4 teaspoon red pepper flakes (optional, for added heat)
Salt and pepper to taste
Fresh basil or parsley, chopped (for garnish)
Freshly grated Parmesan cheese (for serving)

Instructions:
Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Drain the pasta and set aside.

Cook the Sausage: While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the sausage and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Remove the sausage from the skillet and set aside.

Sauté the Onion and Garlic: In the same skillet, add the chopped onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for another 1-2 minutes until fragrant.

Deglaze with White Wine: Add the white wine to the skillet, stirring to scrape up any browned bits from the bottom. Let the wine simmer for about 2-3 minutes until it reduces slightly.

Make the Creamy Sauce: Add the heavy cream and chicken broth to the skillet, stirring to combine. Bring the mixture to a simmer and let it cook for about 5 minutes, allowing the sauce to thicken slightly.

Combine the Ingredients: Return the cooked sausage to the skillet and stir to combine. Add the grated Parmesan cheese, dried basil and red pepper flakes (if using). Stir until the cheese is melted and the sauce is well combined. Season with salt and pepper to taste.

Mix with Pasta: Add the cooked pasta to the skillet and toss to coat the pasta evenly with the sauce. Let it cook for another 2-3 minutes to allow the flavors to meld together.

Serve: Serve the creamy pasta with sausage and white wine hot, garnished with freshly chopped basil or parsley and additional grated Parmesan cheese.

Tips: Add Vegetables: For added flavor and nutrition, consider adding some vegetables such as spinach, bell peppers, or mushrooms to the dish. Sauté them along with the onions and garlic.
Make Ahead: The sauce can be made ahead of time and stored in the refrigerator for up to 2 days. Reheat it gently before tossing it with the pasta.
Adjust Thickness: If the sauce is too thick, add a bit more chicken broth or pasta cooking water to reach your desired consistency.
