Italian Cream Cake Recipe

Ingredients:

  • 1 cup buttermilk
  • 8 ounces cream cheese
  • 1/2 cup butter
  • 1 teaspoon vanilla extract
  • 4 cups confectioners’ sugar
  • 2 tablespoons light cream
  • 1/2 cup chopped walnuts
  • 1 teaspoon baking soda
  • 1/2 cup butter
  • 1 teaspoon vanilla extract
  • 1 cup flaked coconut
  • 1 cup sweetened flaked coconut
  • 1 teaspoon baking powder
  • 1/2 cup shortening
  • 2 cups white sugar
  • 5 eggs
  • 2 cups all-purpose flour
  1. Preheat oven to 350 degrees. Grease 3, 9-inch pans. Combine the cup of buttermilk and baking soda in a small bowl and set to the side. In a medium to large bowl, cream the butter sugar, and shortening. Mix in the eggs, buttermilk mixture, coconut, vanilla, flour, and baking powder. Pour batter into the 3 pans evenly.
  2. Bake the cakes for 35 minutes. When entirely cooked, set out to cool. While the cakes cool, make the frosting.
  3. For the frosting, combine cream cheese, sugar, butter, and 1 teaspoon of vanilla in a medium bowl and beat. Slowly mix in cream until you have reached the consistency that you prefer. Next, mix in the chopped walnuts and coconut evenly.
  4. Frost each cake between the layers and then frost the sides of the cake and the top evenly.
  5. Enjoy!
