Ingredients:
- 1 cup buttermilk
- 8 ounces cream cheese
- 1/2 cup butter
- 1 teaspoon vanilla extract
- 4 cups confectioners’ sugar
- 2 tablespoons light cream
- 1/2 cup chopped walnuts
- 1 teaspoon baking soda
- 1/2 cup butter
- 1 teaspoon vanilla extract
- 1 cup flaked coconut
- 1 cup sweetened flaked coconut
- 1 teaspoon baking powder
- 1/2 cup shortening
- 2 cups white sugar
- 5 eggs
- 2 cups all-purpose flour
- Preheat oven to 350 degrees. Grease 3, 9-inch pans. Combine the cup of buttermilk and baking soda in a small bowl and set to the side. In a medium to large bowl, cream the butter sugar, and shortening. Mix in the eggs, buttermilk mixture, coconut, vanilla, flour, and baking powder. Pour batter into the 3 pans evenly.
- Bake the cakes for 35 minutes. When entirely cooked, set out to cool. While the cakes cool, make the frosting.
- For the frosting, combine cream cheese, sugar, butter, and 1 teaspoon of vanilla in a medium bowl and beat. Slowly mix in cream until you have reached the consistency that you prefer. Next, mix in the chopped walnuts and coconut evenly.
- Frost each cake between the layers and then frost the sides of the cake and the top evenly.
