Ingredients – For Mango Layer

  • 1 cup mango nectar
  • 1 (1/4 ounce) package of unflavored powder gelatin 
  • 1 1/2 cup fresh mango puree (from 4 to 5 Ataulfo mangoes)

Ingredients – For Vanilla Bean Layer

  • 1 cup milk
  • 1 (1/4 ounce) package of unflavored powder gelatin
  • 1/3 cup sugar
  • a pinch of kosher salt
  • 1 tablespoon vanilla bean paste
  • 2 cups heavy cream
