There is nothing like delicious pumpkin pie when the weather begins to cool down! This Amaretti Pumpkin Pie is filled with mascarpone cheese, amaretto, brown sugar, and pumpkin spice! Ingredients
For the base
- 1/2 cup of Crushed Graham Crackers
- 2 Tbsp of Granulated Sugar
- 1/2 cup of Unsalted Butter, melted
- 5 oz of Amaretti Cookies
- 3 Tbsp of Sliced Almonds
For the filling
- 15 oz of Pure Pumpkin puree
- 1 cup of Evaporated Milk
- 1/4 cup of Heavy Cream
- 1/2 cup of Granulated Sugar
- 1/4 cup of Brown Sugar
- 2 Eggs
- 2 tsp of Pumpkin Pie Spice
For the topping
- 2/3 cup of Heavy Cream
- 4 oz of Mascarpone Cheese, left at room temperature for about 2 hours
- 2 Tbsp of Granulated Sugar
- 3 to 4 Tbsp of Amaretto (or less depending on your preference)
