Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 3/4 pound Italian sausage links, casings removed
  • 1/2 red onion, finely chopped
  • 4 cloves garlic, minced
  • 2 ribs celery, finely chopped
  • 1 cup orzo pasta
  • 3 cups low-sodium chicken broth
  • 3 cups of water
  • 2 (15 oz.) cans diced tomatoes
  • 1 tablespoon Italian seasoning
  • 1 tablespoon oregano
  • 1/2 teaspoon ground fennel, optional
  • 1/4 teaspoon red pepper flakes
  • Kosher salt and freshly ground pepper, to taste
  • 1 cup parmesan cheese, grate
