Ingredients
- 2 tablespoons extra-virgin olive oil
- 3/4 pound Italian sausage links, casings removed
- 1/2 red onion, finely chopped
- 4 cloves garlic, minced
- 2 ribs celery, finely chopped
- 1 cup orzo pasta
- 3 cups low-sodium chicken broth
- 3 cups of water
- 2 (15 oz.) cans diced tomatoes
- 1 tablespoon Italian seasoning
- 1 tablespoon oregano
- 1/2 teaspoon ground fennel, optional
- 1/4 teaspoon red pepper flakes
- Kosher salt and freshly ground pepper, to taste
- 1 cup parmesan cheese, grate
