Ingredients for Pappardelle:
- 1 1/2 Cups of 00 Flour (plus extra for dusting)
- 1/4 Cup of Semolina Flour (plus extra for dusting)
- A Pinch of Salt
- 1 Whole Egg
- 8 Egg Yolks
Ingredients for Sausage Ragu:
- 2 Tablespoons of Olive Oil
- 1 Lb of Sweet or Spicy Italian Sausage
- 1 Red Onion (diced)
- 1 Carrot (diced)
- 1/2 Cup of Dry White Wine
- 1 1/2 Cups of Tomato Puree
- Rind of Parmesan Cheese
- Salt
- 1/2 Cup of Freshly Grated Parmesan Cheese
- Freshly Chopped Basil
