Ingredients for Pappardelle:

  • 1 1/2 Cups of 00 Flour (plus extra for dusting)
  • 1/4 Cup of Semolina Flour (plus extra for dusting)
  • A Pinch of Salt
  • 1 Whole Egg
  • 8 Egg Yolks

Ingredients for Sausage Ragu:

  • 2 Tablespoons of Olive Oil
  • 1 Lb of Sweet or Spicy Italian Sausage
  • 1 Red Onion (diced)
  • 1 Carrot (diced)
  • 1/2 Cup of Dry White Wine
  • 1 1/2 Cups of Tomato Puree
  • Rind of Parmesan Cheese
  • Salt
  • 1/2 Cup of Freshly Grated Parmesan Cheese
  • Freshly Chopped Basil
