For the Cookies: – makes 3 dozen
- 1 cup sugar
- 1/2 cup butter, softened
- 8 ounces ricotta cheese, room temperature
- 2 lemons, zest and juice
- 1 large egg, room temperature
- 3 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1 teaspoon salt
For the Icing:
- 2 cups confectioners sugar
- 1/4 cup lemon cuice
- 2 tablespoons butter, melted
- sprinkles to decorate
