Homemade Ricotta & Zucchini Gnocchi

This recipe brings gnocchi to a whole other level for all of the ricotta lovers out there. Who ever thought you could put fresh ricotta in pasta dough? Check out the recipe by Tutti a Tavola below!

Ingredients for Gnocchi Dough:

  • 150g of 00 Flour
  • 250g of Fresh Ricotta
  • 1 Zucchini
  • 1 Egg

Ingredients for Gnocchi Toppings:

  • 100g of Speck
  • 1 Zucchini
  • Butter or Extra Virgin Olive Oil
  • Salt and Pepper
  • Grated Parmesan Cheese
