Crunchy Cherry Almond Biscotti Recipe

These crunchy and sweet biscotti are made with sweet maraschino cherries. They are fun to make and taste as good as they look!

Biscotti are baked twice, which gives them an excellent crunchy consistency. When one thinks of the ideal cookie to dunk in coffee, these come to mind! Biscotti are found in many Italian households during the holiday season. Why give Santa chocolate chip cookies when you could give him biscotti!? Get the recipe below from Meggan from Culinary Hill!

Ingredients

  • 1 cup slivered almonds toasted (see notes)
  • 1 cup granulated sugar
  • ½ cup butter softened
  • 1 teaspoon almond extract
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 3 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 cup maraschino cherries well-drained, patted dry and finely chopped (see notes)
