Chocolate Chip Sweet Buns “Girelle” Recipe

"Girelle", or Italian sweet buns, are excellent for breakfast or dessert!

They are a cross between a puff pastry and a brioche dough. This recipe by An Italian in My Kitchen is PERFECT!



  • 2 cups all purpose flour* (+2 tablespoons extra if needed) (250 grams)
  • 1 1/2 teaspoons active dry yeast
  • 6 1/2 tablespoons water (lukewarm)** (100 grams)
  • 1 large egg yolk
  • 2 tablespoons granulated sugar
  • 1/4 teaspoon salt
  • 1/4 cup butter softened (salted)
