These antipasti hoagies combine green olives, Giardiniera, anchovies, Italian herbs, onions, and strips of flank steak! They are incredible for beach trips, picnics, and get-togethers.

INGREDIENTS:
For the rolls:
- 3Â hoagie rolls
- 3 tablespoons olive oil
For the filling:
- 1 pound flat iron or flank steak
- 1 1/2 teaspoons kosher salt divided
- 1Â red onion sliced 1/3 inch thick
- 1 1/2 teaspoons kosher salt divided
- 1 teaspoon olive oil for grilling onions, plus 2 tablespoons for the giardiniera mix
- 2 anchovy filets diced small, or 1/2 teaspoon anchovy paste
- 1/2 teaspoon dried oregano
- 1 tablespoon balsamic vinegar
- 1 ½ cups giardiniera chopped, such as Morgan’s
- 1/3 cup pitted green olives such as Cerignola or Castelvetrano, chopped
- 1/2 cup chopped basil
- 9 slices provolone cheese
- 3 cups loosely packed baby arugula
