Piricchittus – Italian Easter Cookies Recipe

Piricchittus are yummy and simple Italian lemon cookies eaten around Easter. They are baked and sauteed in a lemon sugar mixture!

Ingredients

  •  cups all-purpose flour* (200 grams)
  • 1 pinch salt
  • ½ teaspoon baking powder
  • 2 large eggs
  • 2 tablespoon vegetable oil (I use corn or sunflower)
  • zest ½ lemon
  • 1 tablespoon milk
  • 1 tablespoon granulated sugar

SUGAR GLAZE

  • ½ cup granulated sugar (100 grams)
  • ¼ cup +1 tablespoon water (75 grams)
  • zest ½ lemon

POWDERED SUGAR GLAZE

  • ½ cup powdered/icing sugar (60 grams)
  • 1-2 tablespoons lemon juice, cream, milk or even a mixture.
  • zest ½ lemon (if desired)
