INGREDIENTS
- 1 1/2 cups grated zucchini packed tightly
- 1/2 cup parmesan cheese scant
- 1/2 cup pecorino cheese scant
- 1/2 cup olive oil see notes
- 1/4 cup pine nuts
- 1-2 cloves fresh garlic
- 1/2 cup fresh basil
- salt for drawing moisture out of the zucchini
