  • 1 1/2 cups grated zucchini packed tightly
  • 1/2 cup parmesan cheese scant
  • 1/2 cup pecorino cheese scant
  • 1/2 cup olive oil see notes
  • 1/4 cup pine nuts
  • 1-2 cloves fresh garlic
  • 1/2 cup fresh basil
  • salt for drawing moisture out of the zucchini
