If you love cannoli and also love cupcakes, you’re allowed to have the best of both worlds with this amazing recipe!
Ingredients:
- 2-½ cups Flour
- 2-½ teaspoons Baking Powder
- ½ cups Butter, Softened
- 4 Eggs
- 1-½ teaspoon Vanilla Extract
- 1 Tablespoon Marsala Wine
- Salt, to taste
- 1-¾ cup Sugar
- 1 cup Milk
- 1 cup Ricotta Cheese
- 1 teaspoon Orange Zest
- 2 Tablespoons Powdered Sugar
- 1 or 2 cups of Chocolate Chips
FOR THE FROSTING:
- 1-½ stick Butter, Softened
- 1 whole Vanilla Bean, Split, And Scraped
- 6 cups Powdered Sugar
- 3 Tablespoons Milk
- ¾ cups Shortening
- 1-½ teaspoon Vanilla Extract
Directions:
For the cupcakes
- Heat oven to 380 degrees.
- Next, line two pans with cupcake wrappers.
- In large bowl, mix the eggs, butter, vanilla, milk, and marsala wine.
- In medium bowl, combine flour, baking powder, salt, and sugar together.
- Add in the ricotta cheese, orange zest, and powdered sugar to the large bowl of wet ingredients. Combine the dry ingredients.
- Gradually Stir in the chocolate chips so they are fully incorporated.
- Next, pour batter into 24 cupcake liners. Bake for 25 minutes.
- Remove the cupcakes from the pans and let cool on a rack.
For the frosting
- Cream shortening and butter together, and then add in the vanilla extract and the powdered sugar. Mix in the milk, and then mix in the vanilla from the vanilla bean.
- When cupcakes are completely cooled frost and add
choclate chips. - Mangia!
