MUST TRY: Cannoli Cupcakes with Vanilla Bean Frosting Recipe

Ingredients:

  • 2-½ cups Flour
  • 2-½ teaspoons Baking Powder
  • ½ cups Butter, Softened
  • 4 Eggs
  • 1-½ teaspoon Vanilla Extract
  • 1 Tablespoon Marsala Wine
  • Salt, to taste
  • 1-¾ cup Sugar
  • 1 cup Milk
  • 1 cup Ricotta Cheese
  • 1 teaspoon Orange Zest
  • 2 Tablespoons Powdered Sugar
  • 1 or 2 cups of Chocolate Chips

FOR THE FROSTING:

  • 1-½ stick Butter, Softened
  • 1 whole Vanilla Bean, Split, And Scraped
  • 6 cups Powdered Sugar
  • 3 Tablespoons Milk
  • ¾ cups Shortening
  • 1-½ teaspoon Vanilla Extract

Directions:

For the cupcakes

  1. Heat oven to 380 degrees.
  2. Next, line two pans with cupcake wrappers.
  3. In large bowl, mix the eggs, butter, vanilla, milk, and marsala wine.
  4. In medium bowl, combine flour, baking powder, salt, and sugar together.
  5. Add in the ricotta cheese, orange zest, and powdered sugar to the large bowl of wet ingredients. Combine the dry ingredients.
  6. Gradually Stir in the chocolate chips so they are fully incorporated.
  7. Next, pour batter into 24 cupcake liners. Bake for 25 minutes.
  8. Remove the cupcakes from the pans and let cool on a rack.

For the frosting

  1. Cream shortening and butter together, and then add in the vanilla extract and the powdered sugar. Mix in the milk, and then mix in the vanilla from the vanilla bean.
  2. When cupcakes are completely cooled frost and add choclate chips.
  3. Mangia!
