Pignoli Cookies – Recipe

Pignoli are delicious Italian cookies that are commonly found in Sicily and southern Italy. They are crisp, golden, and studded with tasty pine nuts. They are considered a luxury cookie, and sure taste like one too!

Ingredients:

  • One 15-ounce can gluten-free almond paste, finely crumbled
  • 1 Cup confectioners’ sugar
  • 2 1/2 Tablespoons honey
  • Pinch ground cinnamon
  • Salt, to taste
  • 2 Large egg whites
  • 1 Zested lemon
  • 1 Cups of pine nuts
  • Disposable pastry bag

Directions:

  1. Line baking sheets with parchment paper and preheat the oven to 355 degrees F. Mix the almond paste on high speed in a large bowl. Begin beating in confectioners sugar on low speed. Add in the cinnamon, honey, egg whites, salt, and lemon zest. Mix on medium speed for 4 minutes.
  2. Fill a pastry bag with the dough making sure you push all of the dough towards the tip of the bag.
  3. Cut off the tip of the bag and pipe 1-inch balls onto the paper. Then, add the pine nuts to the surface of the cookies. Bake them for around 14 minutes, or until the cookies are golden brown. Enjoy!
