Ingredients

  • 4 tbsp extra virgin olive oil
  • 1 garlic clove, minced
  • 2 cups eggplant, cut into 2 cm cubes
  • 1 cup crushed strained tomatoes
  • 1/2 cup fresh tomatoes, diced
  • 225 g rigatoni
  • 2 basil leaves, plus more for garnish
  • 2.5 cups water
  • 1/2 cup fresh mozzarella (bocconcini), cut into cubes
  • salt and pepper to taste
  • parmesan cheese for garnish
