One-Bowl Lemon Ricotta Cupcakes

Ingredients

  • 1 and 1/2 cups cake flour
  • 1 cup granulated sugar
  • 2 teaspoons lemon zest
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 stick (4 ounces) unsalted butter, very soft
  • 1/2 tablespoon vanilla
  • 2 large eggs, at room temperature
  • 1/2 cup whole milk ricotta cheese
  • 1/4 cup whole milk
  • 1 and 1/2 tablespoons lemon juice (fresh or 100% juice not from concentrate)

Lemon Ricotta Frosting

  • 1 stick (4 ounces) unsalted butter, very soft
  • 2 to 3 cups confectioners sugar, sifted
  • 3 tablespoons whole milk ricotta cheese
  • 1 tablespoon lemon juice (fresh or 100% juice not from concentrate)
  • 1 teaspoon lemon zest (optional)
