Prosciutto Wrapped Chicken & Risotto – Recipe

Chicken:

  • 2 boneless, skinless chicken breast halves (6 ounces each)
  • 4 slices prosciutto
  • 1 tablespoon olive oil

Risotto:

  • 4 cups chicken broth
  • 2 sprigs fresh sage, stems and leaves separated
  • 1½ tablespoons olive oil
  • 1 medium shallot, minced
  • 2 garlic cloves, thinly sliced
  • ¾ cup Arborio rice
  • ½ cup grape tomatoes, halved lengthwise
  • 4 cups fresh spinach
  • ½ cup grated Parmesan cheese
  • 1 tablespoon unsalted butter
  • sea salt and freshly ground black pepper
