INGREDIENTS
- 1/2 cup (115 g) unsalted butter, softened
- 1/2 cup (100 g) white granulated sugar
- 2 large eggs
- 1/2 tsp EACH: coconut extract, vanilla extract
- 1/2 cup (120 ml) full-fat coconut milk
- 1 cup (125 g) all-purpose flour
- 2 tsp baking powder
- 1/8 tsp salt
- 1/2 cup (60 g) flaked coconut; optional
- 1 recipe Italian Meringue Buttercream
- 1 tsp coconut extract
- 1/2 cup (60 g) toasted coconut, for garnish
