Best Coconut Cupcakes with Italian Coconut Buttercream

  • 1/2 cup (115 g) unsalted butter, softened
  • 1/2 cup (100 g) white granulated sugar
  • 2 large eggs
  • 1/2 tsp EACH: coconut extract, vanilla extract
  • 1/2 cup (120 ml) full-fat coconut milk
  • 1 cup (125 g) all-purpose flour
  • 2 tsp baking powder
  • 1/8 tsp salt
  • 1/2 cup (60 g) flaked coconut; optional
  • 1 recipe Italian Meringue Buttercream
  • 1 tsp coconut extract
  • 1/2 cup (60 g) toasted coconut, for garnish
