1 can cooked Cannellini beans
1 poached egg
Arugula salad (toss arugula in olive oil, lemon juice and sea salt)
Assemble ingredients in a bowl. Add salt, black pepper and crushed red pepper to taste.
Note: Parmigiano-Reggiano is a great addition to the creamy polenta.
