Gremolata is an Italian condiment made of lemon zest, parsley and garlic. This mixture typically accompanies Ossobuco alla Milanese but can be added to enhance so many dishes! I love to put gremolata on chicken cutlets, grilled fish, steak and even just on toasted bread with olive oil. You can also switch it up a bit and add either anchovies, toasted pine nuts or Pecorino Romano!
Ingredients:
1 lemon
1 bunch Italian parsley
2 cloves of garlic
pinch of salt
optional: anchovies (1 filet or 1 tsp anchovy paste), toasted pine nuts (1 tablespoon), Pecorino Romano (1 tablespoon)
Process:
Zest the entire lemon using a grater over a small bowl. Finely chop garlic and parsley and add to the bowl. Mix in salt and stir to combine. You can add a splash of olive oil if you’d like to make it more of a sauce as well!
