In this episode of Pasta Grannies, Nonna Domenica makes gnocchi with tomato sauce. Domenica lives in the village of Montese in Emilia Romagna which is famous for its potatoes. These wonderful potatoes make amazing gnocchi! The secret to her recipe is the flour to potato ratio. She uses 1 kilo of potatoes for every 300 g of flour to make the gnocchi incredibly light and delicious. Domenica uses carrot, celery, shallots, and homemade passata from her garden to make the tomato sauce. She finishes the dish with two year aged Parmigiano-Reggiano.
