Comforting Italian Veggie Broth with Pastina – Recipe

With the frigid winter upon many, now is the perfect time to make a little pastina soup!

This comforting Italian veggie broth with pastina is virtually overflowing with nutrients. The broth is made of numerous vegetables including butternut squash, carrots, and celery. This truly is the most comforting guilt-free meal ever! Get the recipe below by Laura Vitale!

Ingredients

  • 1 small Butternut Squash, peeled, seeded and roughly chopped
  • 2 Stalks of Celery, roughly chopped
  • 2 Carrots, peeled and roughly chopped
  • 1 Small Yellow Onion, roughly chopped
  • 1/2 lb of Green Beans, trimmed and roughly chopped
  • 2 Zucchini, roughly chopped
  • 2 Tomatoes, quartered
  • Few Sprigs of Parsley
  • Few Sprigs of Basil
  • Olive Oil
  • Salt
  • Pastina of choice
  • Freshly grated parm
  • Rind from a piece of Parmiggiano
