Tuscan Pork Sausage Ragu

Giada's incredible Tuscan Pork Sausage Ragu is the kind of comfort food you deserve on a cold evening! It is bursting with all the incredible flavors of Tuscany and is great with a bottle of Chianti!

Serve it with a salad and some hot bread or have it alone!


  • 2 tablespoons olive oil
  • 1 pound sweet or spicy Italian pork sausage
  • 1 red onion diced
  • 1 carrot peeled and diced
  • Kosher salt
  • 1/2 cup dry red wine such as Chianti
  • 1 1/2 cups tomato puree such as Mutti
  • 1 large sprig of rosemary
  • One 2-inch rind of Parmesan cheese
  • 1 pound short pasta such as rigatoni
  • 1/2 cup freshly grated Parmesan cheese plus more for garnish
  • 3 tablespoons chopped fresh basil
