Linguine with Sun-Dried Tomatoes & Olives – Recipe

If this recipe doesn't scream "summer", I don't know what does!

There is no reason to order food when this meal only takes 8 minutes to prep and 9 minutes to cook! A great aspect of this dish is that it uses very simple ingredients such as basil, garlic, olive oil, tomatoes, and basil! You likely have all the ingredients on hand already! Try this out with fresh tomatoes and basil from your garden this summer if you want to be in heaven!

INGREDIENTS:

  • 1 pound linguine pasta 
  • 1 cup 6 ounces chopped or julienned sun-dried tomatoes in oil, drained
  • 1 cup 4 ounces medium green olives, pitted
  • 1 packed cup fresh basil leaves
  • 1 clove garlic roughly chopped
  • 1/3 cup extra-virgin olive oil
  • Zest and juice of 1 large lemon
  • 3/4 cup grated Parmesan
  • Salt and freshly ground black pepper
