Pizzicati Italian Pinch Cookies Recipe

Pizzicati are traditional Italian pinch cookies.

These tasty treats are often made in the winter, but can be enjoyed any time of year! They are often filled with jam or Nutella! Pizzicati are extremely buttery and crunchy on the outside, which blends well with their soft interior!


  • 1 1/2 cups all-purpose flour (195 grams)
  • 1/2 cup corn starch (68 grams)
  • 1/2 cup + 2 tablespoons icing / powdered sugar (75 grams)
  • 1/2 teaspoon baking powder
  • 1 pinch salt
  • 1 large egg (room temperature)
  • 1/2 cup butter (soft) (112 grams)
  • 1/4 – 1/2 cup jam*
