Italian Lemon Stuffed Cookies Recipe

These lemon stuffed cookies are beautiful and delectable!

INGREDIENTS

LEMON PASTRY CREAM

  • ½ cup milk (I used 2%)
  • ½ cup whole/heavy cream
  • peel from 1-2 lemons (no white)
  • 2 large egg yolks
  •  cup granulated sugar
  • 1 ½ tablespoons all-purpose flour
  • ½ teaspoon vanilla

COOKIE DOUGH

  •  cups + 3 tablespoons all-purpose flour (220 grams)
  • ¼ teaspoon baking soda
  • ½ cup + 2 ½ tablespoons powdered/icing sugar (80 grams)
  • 1 pinch salt
  • zest from ½ lemon
  • 2 large egg yolks
  • ½ cup + 1 ½ tablespoons butter (cold) (135 grams)

EXTRAS

  • 3-4 tablespoons powdered/icing sugar

LEMON GLAZE

  • ½ cup powdered/icing sugar (sifted) (60 grams)
  • ½ tablespoon whole/whipping cream
  • 1 tablespoon lemon juice
