Easy Italian Potato Soup

Quick, simply, and DELICIOUS!

There is something very comforting about a hot bowl of soup! Soup can almost feel like a guilty pleasure, but this recipe is actually good for you! Made with potatoes, celery, carrots, onions, tomatoes, and fresh herbs, this soup contains many vitamins to fuel your body.

INGREDIENTS

  • 2-3 tablespoons olive oil
  • ½ cup carrot (chopped) (64 grams)
  •  cup celery (chopped) (35 grams)
  •  cup onion (minced) (43 grams)
  •  cups potatoes (medium cubed) (595 grams)
  • ¾ cup canned pelati tomatoes (chopped) (200 grams)
  • 3 cups vegetable broth (735 grams)
  • 1-2 dashes hot pepper flakes or black pepper (if desired)
  • salt*
  • ½-1 teaspoon oregano
  • ½-1 teaspoon basil

EXTRAS

  • 3-4 tablespoons freshly grated parmesan cheese
  • 1-2 teaspoons freshly chopped parsley
