For the Cinnamon Dolce Latte Cake:
- 3 cups cake flour, or 2 2/3 cup all-purpose flour + 1/3 cup corn starch
- 2 tablespoons instant espresso powder
- 1 tablespoon ground cinnamon
- 4 teaspoon baking powder
- 1 teaspoon salt
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 1 1/2 cups unsalted butter, softened
- 1 1/2 cups whole milk
- 4 large eggs
- 1 tablespoon vanilla extract
For the Mascarpone Frosting:
- 16 ounces mascarpone cheese
- 1/2 cup heavy cream
- 6-8 cups powdered sugar
- Pinch salt
