Spicy Rigatoni Alla Vodka with Mascarpone and Speck Recipe

A fun a delicious twist on vodka sauce!

This Spicy Rigatoni Alla Vodka with Mascarpone and Speck by Pina Bresciani is versatile and fabulous! The mascarpone makes it perfectly creamy, and the chili flakes give it a kick! You can add as few or as many chili flakes as you’d like depending on how spicy you want the sauce to be! Eat this dish alone or pair it with a salad and bread!

INGREDIENTS

  • 100 grams rigatoni pasta
  • 2 tbsp olive oil
  • 2 tbsp white or yellow onion
  • finely diced
    dry chili flakes to taste
  • 2 tbsp tomato paste
  • 2-3 tbsp vodka
  • 1/2 cup mascarpone cheese
  • 1/4 cup speck optional
  • parmigiano reggiano
  • parsley minced
  • salt to taste
