Pistachio Cream-Filled Castagnole Recipe

Delicious castagnole with a creamy pistachio filling - what's not to love?

Castagnole are small donuts shaped like chestnuts, rolled in powdered sugar! Castagnole are crispy and crunchy on the outside but soft on the inside! They are very versatile and can include ricotta, Nutella, or pistachio like this recipe! Get the recipe by the incredible Pina Bresciani!

INGREDIENTS

  • 1 1/2 cup (225g) all purpose flour
  • 2 eggs large
  • 3 tbsp butter
  • 1/4 cup granulated sugar plus more for dusting
  • zest of one lemon
  • 2 tsp vanilla extract
  • 1 tbsp rum
  • pinch of salt
  • 2 tsp baking powder
  • 500-700 mL peanut oil or sunflower oil for frying
  • 1/2 cup pistachio cream
