INGREDIENTS
- 6 large eggs
- 1 1/3 cup (300g) granulated sugar
- 1 cup (226g) unsalted butter
- 5 1/2 cups (687g) all-purpose flour, divided
- 2 teaspoons (8g) baking powder
- 1 teaspoon (5ml) vanilla or almond extract
- 1/2 cup (65g) pistachios
- 1/2 cup (65g) hazelnuts (any type of nut will work; can use 1 cup pistachios instead)
- 3/4 to 1 cup (120g) dried cranberries
- For Chocolate Coating:
- 2 to 3 (540g) cups semi-sweet chocolate chips
- 1/2 cup (90g) white chocolate chips
- 1 teaspoon shortening, as needed
- diced pistachios, for garnish
