What better treat in the spring and summer than ice cream sandwiches!? Growing up these were many childrens’ favorite! Here is an Italian inspired adaption by Giada!

INGREDIENTS:
For the cookies:
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 stick unsalted butter, softened
- 2 cups sugar
- 2 eggs, at room temperature
- 1 (15-ounce) container whole milk ricotta cheese, such as Galbani
- 3 tablespoons lemon juice
- 1 lemon, zested
For the glaze:
- 1 1/2 cups powdered sugar
- 3 tablespoons lemon juice
- 1 lemon, zested
- Raspberry Sorbetto or Vanilla Gelato
