Lemon Ricotta Ice Cream Sandwiches – Recipe

What better treat in the spring and summer than ice cream sandwiches!? Growing up these were many childrens’ favorite! Here is an Italian inspired adaption by Giada!

SERVING SIZE:

About 22 Sandwiches

INGREDIENTS:

For the cookies:

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 stick unsalted butter, softened
  • 2 cups sugar
  • 2 eggs, at room temperature
  • 1 (15-ounce) container whole milk ricotta cheese, such as Galbani
  • 3 tablespoons lemon juice
  • 1 lemon, zested

For the glaze:

  • 1 1/2 cups powdered sugar
  • 3 tablespoons lemon juice
  • 1 lemon, zested
  • Raspberry Sorbetto or Vanilla Gelato
