3 New Types of Pecorino Romano Introduced 🧀

The Consortium for protected designation of origin products (PDO) is introducing 3 new types of Pecorino Romano to appeal to a broader audience.

The Consortium for protected designation of origin products (PDO) is celebrating 40 years! This organization helps protect the tradition and culture surrounding Italian food and beverage products. You have likely seen “DOP” on Italian products you’ve purchased at some point. This term signifies that the product is protected and authentic.

The Consortium is introducing 3 new types of Pecorino Romano to celebrate 40 years and to appeal to a broader audience. 

  1. ‘Extra’ Pecorino Romano PDO, this cheese has reduced salt content (maximum 3.5%).

  2. ‘Reserve’ Pecorino with a maturation of at least 14 months and up to 30 months).

  3. ‘Mountain’ Pecorino, whose milk is required to come from breeding above 600 meters and processed within 10 kilometers of breeding.


Changes to the specifications of these products will allow a broader range of sale while maintaining the integrity and tradition of the cheese.
