On a hot day, it always feels good to eat a little lighter! This wonderful grilled eggplant parm pairs well with some crusty bread and a glass of red wine.
Ingredients
2 lbs eggplant sliced crosswise, 1/4 inch thick
4 large tomatoes sliced crosswise 1/4 inch thick
Extra-virgin olive oil, for brushing
Sea salt
1/4 cup chopped olives
1 tablespoon oil packed Calabrian chili or chili oil
