How to Make Roman Sweet Buns – Maritozzi 🇮🇹

Maritozzi are delicious brioche buns filled with fresh cream often enjoyed in Rome for breakfast!

When in Rome, Maritozzi are a must! Maritozzi are sweet brioche buns filled with fresh cream. Their history dates back to the Middle Ages when this treat was enjoyed during lent and by lovers (think marito). The recipe has changed a bit and Maritozzi are now enjoyed as breakfast. If you can’t have these in Italy right now, making them at home is easy and only requires a few ingredients. I recommend making your own fresh cream for the best tasting buns! This recipe only takes 20 minutes to prepare (quite a bit of resting time) and 20 minutes to bake. This recipe serves 12. Note: I like to add cinnamon and lemon zest to the dough and I do not use cocoa powder for dusting (see recipe below).

Ingredients:

  • 1 lb all-purpose flour sifted
  • 1/2 cup sugar
  • 1 pinch salt
  • 1 tsp vanilla
  • 1 tsp ground cinnamon
  • 1 tsp lemon zest
  • 4 egg yolks (reserve the whites)
  • 7 oz milk scalded
  • 1 1/2 tbsp fresh yeast
  • 3 tbsp powdered sugar
  • 16 oz fresh cream
