When I have a huge summer tomato harvest, I make passata; but one of my other favorite things to make is sun dried tomatoes! They are a great addition to pasta, pesto, pizza and antipasti! I use two different methods – one in the car and one in the oven. Have you ever made sun dried tomatoes? Let us know in the comments below!

- To make sun dried tomatoes in the oven, preheat your oven to 225 F. If you want to dry them outside, a hot car in the sun is a great option to keep bugs away.
- Cut tomatoes in half and season with salt, olive oil, garlic and a pinch of oregano. (You can season with only salt if you want them plain).
- If you are using the oven method, place tomatoes on a lightly oiled baking tray. Bake 4 hours or until dehydrated. If you want to try the car method, place a lightly oiled tray of the tomatoes in your car on a hot summer day on the dashboard in the sun for about 12 hours.
- Remove tomatoes and place in a jar with olive oil. Store in the refrigerator for up to a week. Serve on pizza, in almond pesto, in pasta or antipasto with bread!
