Trapizzino is a street food in Rome made out of pizza dough and various fillings. However, the fillings aren’t even typical of pizza or sandwiches; they vary from oxtail to tripe and are based on typical dishes you’d find in classic Roman cuisine. Roman pizza chef, Stefano Callegari invented Trapizzino in 2008 and it has since become a Roman staple.
