ECLAIRS
- 125 ml water
- 125 ml milk
- 1 tsp sea salt (or 1/2 tsp fine salt)
- 1 tsp sugar
- 110 g butter (unsalted)
- 140 g bread flour
- 4 large eggs
TIRAMISU FILLING
- 150 ml double cream
- 50 g icing sugar
- 250 g marscapone
- 1 tsp vanilla extract
- 1 tsp espresso powder
- 1 tbsp marsala
GANACHE AND DECORATION
- 150 ml double cream
- 75 g dark chocolate
- 75 g milk chocolate
- a little dark chocolate (in bar form)
