INGREDIENTS
- 4 ounces thinly sliced prosciutto
- 3 cups low-sodium chicken broth
- 2 Tbsp. olive oil
- 1/3 cup finely diced yellow onion
- pinch salt
- 1 cup arborio rice
- 1/3 cup dry white wine
- 10 stalks fresh asparagus* cut into 1/2″ pieces
- 1/4 cup mascarpone
- 2 Tbsp. unsalted butter
- salt + freshly cracked black pepper to taste
