Lemon Asparagus Risotto with Prosciutto – Recipe

This lemon asparagus risotto is ideal for the spring and summer! It is full of fresh flavors!

INGREDIENTS

  • 4 ounces thinly sliced prosciutto
  • 3 cups low-sodium chicken broth
  • 2 Tbsp. olive oil
  • 1/3 cup finely diced yellow onion
  • pinch salt
  • 1 cup arborio rice
  • 1/3 cup dry white wine
  • 10 stalks fresh asparagus* cut into 1/2″ pieces
  • 1/4 cup mascarpone
  • 2 Tbsp. unsalted butter
  • salt + freshly cracked black pepper to taste
  • 2 Tbsp. fresh lemon juice
