Pesto alla Trapanese is made with almonds as opposed to pine nuts. This sauce is multifunctional and can be used in pasta, on bread, or even on chicken! The fresh flavors really scream “summer”.
INGREDIENTS:
- 1/2 cup toasted slivered almonds
- 1 clove garlic peeled and smashed
- 1 cup packed basil leaves
- 1-pint cherry or grape tomatoes halved
- 1 teaspoon kosher salt
- 1/2 teaspoon red pepper flakes
- 1/2 cup extra virgin olive oil
- 1/2 cup freshly grated parmesan cheese
