Zucchini & Potato Sauce with Gemelli


  1. Cut up zucchini, potatoes, garlic & onions
  2. Using olive oil, coat the bottom of a large pan and set to a medium/low heat setting
  3. Add in onions
  4. After 2 minutes, add in the garlic
  5. After 2 additional minutes, add in the potatoes and mix thoroughly
  6. Add 2 cups of water into the pan
  7. Let cook for 15 minutes and add the top to the pan
  8. Add in zucchini & add salt & pepper to taste
  9. Warm-up any base sauce of your choice
  10. Add another cup of water to the pan of zucchini and potatoes and stir all together
  11. Add in about 2 cups of sauce gradually to the mixture
  12. Add a few basil leaves to the mixture
  13. Put the top on the pan and let it cook for 10-15 minutes
  14. Start boiling water for the Gemelli pasta and cook for 7-8 minutes
  15. When pasta is done, add 3 tbs of butter to it
  16. 1Cover pasta with the sauce and enjoy!
