Umbrian Easter Cake (Ciaramicola) Recipe

Ciaramicola is a delicious Easter cake commonly eaten in Umbria.

In the traditional recipe, an Italian liqueur called Alcheremes is added, giving a vibrant red color. However, this recipe uses Capari (which Italians have in their homes at all times). Get the recipe by Giada!

INGREDIENTS

For the Cake:

  • Vegetable spray
  • 1 cup (2 sticks) unsalted butter, at room temperature
  • 2 cups sugar
  • 4 eggs, at room temperature
  • 1/2 cup whole Greek yogurt
  • 1/3 cup Campari liqueur
  • 3 cups all-purpose flour, plus more for dusting the pan
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon fine salt

For the Meringue Topping:

  • 4 large egg whites
  • Pinch of salt
  • 1/2 cup sugar
  • ¼ teaspoon cream of tartar
  • Sprinkles, for decorating
