Pasta is one of the most popular staple foods; not just in Italy, but across the globe. Most people pick up a bag of their favorite variety of pasta when they are at the store because it is cheap, long-lasting and extremely versatile. However, pasta is surprisingly easy to make yourself as it requires very few ingredients and it is not a laborious process. Here is how to make homemade pasta like a true Hardcore Italian.

Ingredients

All you need to make pasta is the following: *2 cups of flour *three large eggs *1/2 teaspoon of salt *1 tablespoon extra virgin olive oil

Directions

Whisk the flour and salt together. Next, make a well with the flour on your work surface and crack the three eggs and the oil into the center of the well. Use a fork to whisk the eggs and oil in the center of the well and gradually add a little more of the surrounding flour. When the mixture becomes too thick to whisk, knead the dough by hand until all the flour is added.

Wrap the dough in cling-film and leave to rest for 20 minutes. Once rested, cut the dough into quarters.

Dust your work surface and rolling pin with flour to prevent the pasta dough sticking. Roll the pasta dough until it is as thin as possible.

TIP: You can tell if your pasta dough is rolled thinly enough when you can see your hand through your sheet of pasta.

If you are planning to make your own pasta regularly, you might consider buying a pasta making machine instead of rolling by hand.

Now you are ready to make your preferred shape of pasta. One of the easiest options for a beginner is to simply create tagliatelle. These are thin ribbons of pasta that you can make by slicing with a sharp knife. Another option is to use a biscuit cutter to make ravioli parcels.

Bring a pan of lightly salted water to the boil and drop in your pasta. It is important to remember that fresh pasta takes much less time to cook than dried pasta. It only needs to boil for three to four minutes.

Add homemade sugo and mangia!
