Stracciatella is the delicious spreadable interior of burrata, a typical Puglian cheese. This quick version is super easy to make and is the perfect addition to antipasti, pasta, pizza, salad and more! For more advanced stracciatella cheese making, you’ll need to purchase mozzarella curd which you can typically find at cheese shops, Whole Foods and online here.
Ingredients:
8 oz fresh mozzarella
1/2 cup heavy cream
Pinch of salt
Process:
Using your hands, pull apart the fresh mozzarella into shreds and place in a bowl.
Cover shreds of mozzarella in cream and salt. Mix together.
Cover bowl with plastic wrap and refrigerate for atleast one hour.
